Train is by far the best way to travel in China, if you are not in a rush. From Guangzhou, you can take the Hong Kong-Beijing train which stops in GZ. Train T30 leaves GZ at 10:57 and arrives at the BJ West station the next morning at 9:25. Train T16 leaves GZ at 16:62 and arrives at the BJ West station at 14:58 the next day. Hard sleeper cost 460 CNY and 705 CNY for soft sleeper. I think you can book tickets on this train from the KCR website, although I am not totally sure. This route is very popular so you need to book well in advance, especially if you want a hard sleeper.
Once in BJ, you can go to the wall at Badaling (very popular and crowded) or Mutianyu (popular but less crowded). November in BJ is a bit cool, with day temperature hovering between 8 and 10, and lows close to 0.

You can either travel by train which will take about 21 hours, and around RMB 800 for a soft sleeper or you can fly a 3 hour flight for about RMB 1400. Though it will be windy and cold but still it is not too bad a time to travel to Beijing and the Great Wall at Badaling or Mutianyu or Simatai.
